Well it has never been a secret that musicians and conductors play more cautiously when the recording team is there. Dynamics are a major issue for the engineers; not that they will avoid compressing the music to death afterwards.The urge and pressure to get through it as quickly as possible is the priority. This is why the occasional studio performance recorded with fiery or ecstatic playing is remarked on and prized. I have found with CDs that the live performance is often recorded with better sonics and playing than the equivalent studio recording in the digital era.
